The powdery textured coffee that falls through the sieve will work just like instant coffee. You can save whatever remains in the sieve to make regularly brewed coffee, if you like. Simply proceed with the recipe as normal.

Fresh Brewed Espresso

Another potential alternative to using instant coffee in your whipped coffee drink is to use some fresh brewed espresso. Grind your beans and make your espresso like you normally would. Then, carefully whip 2 tablespoons of very hot espresso with 1 tablespoon of sugar. This should give you the same result because the sugar will help the espresso become light and fluffy.
